Ingredients

Below is everything you’ll need to make the best chicken-less teriyaki seitan:

  • Crispy Seitan Bites — use this recipe here to make your seitan bites in 15 minutes or less!
  • Soy sauce — or tamari or liquid aminos if gluten-free.
  • Cornstarch — arrowroot or tapioca starch will also work.
  • No sugar added syrup — I used the Mrs. Butterworth’s brand, but any will do. You can also use regular maple syrup instead but the nutrition information will differ.
  • Garlic & ginger — adds so much flavour and aromatics! I recommend using this garlic mincer and this grater for easy prep of these ingredients.

How to Make

Once you have your seitan ready and ingredients prepped, you’ll have delicious vegan teriyaki chicken within minutes!

Start by combining all ingredients except for the setian together in a small bowl or jar. Then, heat the sauce over medium in a large frying pan, and add in the Crispy Seitan Bites.

The sauce will thicken into a nice and sticky consistency, which will evenly coat the seitan bites. Let it simmer for 5 minutes, and you’re ready to serve!

Customizations

This recipe is extremely versatile and can be easily adapted to suit your preferences! If you don’t like the texture of seitan, you can use the same sauce recipe for tofu or soy curls as well.

To make this a complete meal, you can also add any vegetables you’d like to the frying pan such as broccoli, peppers, carrots, or mushrooms. I’d recommend preparing these first to ensure they are cooked to your liking.

Storage

Teriyaki Seitan lasts up to 5 days in the fridge or 3 months in the freezer. Perfect for meal prep!

Is it possible to make this recipe gluten-free?

Seitan is naturally not something that can be made gluten-free, since the main component of it is literally gluten. However, you can absolutely make this sauce gluten-free by using tamari instead of soy sauce. The sauce can be used with tofu or soy curls for gluten-friendly options!

Can I make this recipe ahead of time?

Definitely! I would recommend just storing the sauce separate from the seitan. Heat the two together in a pan for 5 minutes just before serving.

Does this recipe taste like teriyaki chicken?

Yes, the flavours are there for sure. Seitan and chicken will always differ slightly in terms of taste and texture, but the two are certainly comparable.

Instructions

  • In a small bowl or jar, combine soy sauce, water, cornstarch, syrup, garlic, and ginger.
  • Heat sauce in a large frying pan over medium heat. Once hot, add in the Crispy Seitan Bites, and let simmer for 5 minutes, stirring as needed.
  • Ready to serve! Optionally, serve over rice and garnish with green onions and sesame seeds.
